whole wheat bread

I've been making homemade bread for almost 2 years now...yet still it seems to be hit and miss. Sometimes it turns out great, other times... not so much. This recipe though has always come through for me, though, so I thought I'd share!





Honey Whole-Wheat Bread
{makes 2 loaves}

Ingredients:

3 cups whole wheat flour
1/3 cup honey
1/4 cup butter, softened
3 t. salt
4 1/2 t. (2 pkgs.) yeast
2 1/4 cups very warm water
2-3 cups all purpose flour

Method:

In a large bowl, mix whole wheat flour, honey, butter, salt and yeast on low speed until well mixed. Add warm water and mix again. Stir enough of the all purpose flour in until the dough is easy to handle. Place dough on lightly floured surface and knead until dough is smooth and springy. Place in a large bowl, cover and let rise in warm place until dough has doubles (usually about an hour). When dough has doubled, punch it down to deflate. Split dough in two and flatten each half into a rectangle. Fold up into a loaf and place in greased bread pan. Cover and let dough rise until doubled (usually about 45 minutes). Preheat your oven to 350 and then bake loaves for 40-45 minutes. After they come out of the oven you can spread butter on top if you'd like.
