zuppa toscana

I love soup, and this has to be one of my favorites. It's great because it seems fancy but it's really very simple to make.

Zuppa Toscana
{serves 4-ish}

2 T. olive oil
1 small yellow onion, diced
32 oz. chicken broth
2 medium potatoes, diced into 1 inch cubes
2 cups kale, chopped
1/2 t. sea salt
pinch of red pepper
1/4-1/2 lb. Italian sausage {depending on how much you'd like}
1/4 cup heavy cream

Saute onion in olive oil over medium heat for 5-8 minutes. Add broth, potatoes, kale, sea salt & pepper flakes. Bring to a boil. Reduce heat and let simmer for 15 minutes. Meanwhile cook sausage. After the soup has simmered, add sausage and cream. Top with Parmesan cheese if desired. Serve with breadsticks and salad, delicious!
